Butchery Equipment & Stainless Steel Tables in Kenya

Kenyan butcheries punch hard on margin if — and only if — the equipment behind the counter does the work. Cheap kit means slow service, contamination risk and a license that hangs by a thread. Here is what to fit.
The starter kit
- Electric bone saw — frozen meat and bone in seconds. Stainless body, IP-rated motor.
- Meat mincer TK-22 or TK-32 — choose by daily kilos, not by price.
- Display chiller — glass-front, internal lighting, with rear loading.
- Stainless prep tables — Grade 304, 2.4m × 0.7m minimum, with under-shelf.
- Hand-wash station — required by KMD inspectors. Knee-operated tap.
- Wall-mounted knife rack and sanitiser — small spend, big inspection win.
Why 304 stainless beats 201
You will see "stainless" tables in Gikomba for half the price. They are 201 grade. They rust at the welds within months, especially under brine and chlorine. 304 holds up for a decade. The price difference is paid back the first time you do not have to replace a table.
Refrigeration sizing
Rule of thumb: 1 cubic metre of chiller capacity per 100kg daily throughput. Undersize the chiller and you stack meat warm — instant spoilage risk. Oversize and you burn power.
Layout discipline
Raw to ready-to-sell should flow one direction only — no crossing paths. Separate prep table for offal. Floor drains under sinks and tables. These are layout decisions, not equipment decisions, and they will pass or fail your inspection.
