A production bakery lives or dies on three machines: the mixer, the oven and the proofer. Get those right and almost everything else is detail. Get one wrong and you fight it every shift.

The mixer

A spiral mixer is the right answer for bread and pizza dough. Planetary mixers belong in pastry. For a small bakery, a 34L spiral handles ~50kg dough per cycle. Production lines start at 80L. Look for: heavy-duty gearbox, removable bowl, two speeds, and a timer. Skip the cheap belt-driven units — they slip and burn out within a year.

The oven

Deck ovens give you the crust artisan customers pay for. Convection ovens give you volume and consistency. Most growing bakeries run both. For deck, insist on independent top/bottom heat per deck and steam injection. For convection, look at 5-tray to 10-tray GN1/1 sizes with humidity control.

The proofer

Humidity-controlled proofing is the difference between consistent rise and a daily lottery. A 32-tray proofer cabinet is the sweet spot for a 4-deck operation. Insulated walls, digital controls, and a water reservoir that holds for a full shift.

Supporting cast

  • Bakery display showcase — curved glass, refrigerated.
  • Dough divider and rounder — once you cross ~200 loaves/day.
  • Stainless prep tables and dough trolleys.
  • Walk-in chiller for retarded fermentation.

Three questions to ask every supplier

  1. Spare parts. Do you hold them locally, or is it a 6-week wait from China?
  2. Installation. Who actually installs and commissions — you, or a subcontractor I have never met?
  3. Training. Do you train my head baker on the controls and cleaning?

If any answer is fuzzy, walk away.
